Frustration of store bought bread drove me to make my own. I'm not driving 40m to buy bread at a bakery & everything near me seems like it's been frozen then thawed (stale & crumbly). Milk bread was the 1st type I got good at. I make a loaf each week & now it's not that time consuming.

Yes, it's worth my time.

I make Japanese milk bread with honey like once or twice a month. Really doesn’t take too long and it tastes great. Once you get used to the process it goes by much quicker.

As someone who makes Shokupan regularly, I will say the difficulty drops from a 7 to a 3 with a stand mixer. You can actually do an entire double batch with the stand mixer bowl, one deli container, and the bread pans.

I don’t have a stand mixer but use my bread machine’s dough setting to knead. You did a great job!

Actually prefer to make mine than buy although in fairness to what you mentioned why I don’t have hassles with making it is because I use a mixer to handle the mixing and I proof it overnight in the fridge. Other than forming the shapes I am pretty much hands off with the dough

Use a spoon to mix it up leave it for 10 mic for flpur to autolyze(auto glutten develop), then use a pull and fold method to keep your hands clean and make more glutten.

Bread machines were basically invented to make shokupan, so if you use one it will make pretty perfect tamago sando.

I made Brioche by hand once and it was a hasle. Made it again after owning a stand mixer. And now it's really worth the time

😂 I made milk bread two days ago actually. It didn't taste as good as store bought but it was still really nice. I do have a stand mixer but even so, I still found it to be quite a tedious process. I'm not sure if I'll bother making it again. I've made easier breads, but of course they aren't as fluffy as this one!
