I thought you always start with the wheel furthest from the brake reservoir

Two questions: What is the reason for starting from closest to furthest caliper as opposed to from furthest to closest? Also, if you are not using VCDS/VAGCOM, etc to activate the ABS pump, how are you getting the old fluid out of the pump?

I believe the Bently says to open BOTH front caliper screws, and activate the pump until new fluid exits both at the same time(?).
