You're supposed to take the middle part out but not that much. you also have to wash the whole lettuce after.

While the cutting technique was nice as mentioned by almost everyone you wasted a lot of the lettuce. Although, it might not be his fault, restaurants train people differently, he could have been trained to do that. In general the only waste from iceberg lettuce should be the bottom and loose outer layer of the lettuce.
