As someone who calls Wisconsin home, I thank you from every orifice of my heart for giving my home state the shout out. That's the best looking mac and cheese that I've ever seen. I'll be trying it this week. Thank you, Kent and Shannon. I love your recipes and use them at least a couple of times a week. With a few of them, I have to make extra for the neighbors and the lady who rents our carriage house. Matter of fact, I made your goulash for her last night. She took it to work and had to share it with the ladies that she works with! So, this will be a keeper too. Much love to you both and your furry kids. Edit: Yes, sir, I sure will be praying for Jim.

I love your videos because you never know what might happen when cooking outdoors! In this one at 7:31 a big bug (or spider) crawled off the side of the cheddar cheese as you were closing the lid of the grill!!!

A very thoughtful and delicate cheese smoking demonstration. Tuning it up even more with the sausage crumble and I say yes, this is the best version I've seen yet.

If you slice up the cheese into planks - more surface area = more smoke into the cheese. Then you can put down foil or parchment on bottom because all the extra surface area makes up for NOT having the cheese on a rack.

Always loved my mom's mac & cheese. She put a little cayenne, dry mustard and Worcestershire sauce in it and baked it with a crust of buttered bread crumbs. But now I've _got_ to try it the way you fixed it!

I don't trim off my pork shoulders prior to the brine, seasoning(salt pepper) then smoking. I trim after the shoulders are smoked then they go into my mac an cheese which is finished off baking in the grill 😁 I didn't think too many people use this method, maybe takes too much work. Cooking, baking and grilling is alot of fun especially when I'm thinking of the grateful people I'm cooking for makes it special everytime.
