Hags are very unique monsters. They come in various different types determined by where they live. They are very disturbing and interesting at the same time. Their nature of working together while still being selfish is very rare and while Sam has covered many important facts about them, he forget to state the most important fact that they are also sometimes called your mom.

I love details like “the oath doesn’t work if the fingers were crossed!” because it reminds me that DND was developed in the 70s

Imagine a party being given a quest to kill a child before it reaches it's 13th birthday and turns into a hag

Hags are easily my favorite DND monster, simply cuz of my recurring villain, Granny Ubeca Beetlejiggle. She's a grandmother night hag, probably the only one in the universe of my world, and she loves summoning random monsters for my players to fight for no other reason than to make them suffer.

Also she's essentially everyone's great-grandmother. Got the palsy and everything. Nobody's seen her true form yet, but she's partial to shawls.

Once I had a character whose backstory was a child he kidnapped by a hag, but before the week was up, an adventuring party found them, and got the hag to vomit him up before he was transformed and killed the hag.

After the kids 13th birthday, he stayed human…but noticed magical happenings around him. That’s when he found out 5 days in a Hags stomach being infused with fey magic made him a Wildmagic Sorcerer.

Imagine playing a character who was abducted by hags as a baby and “turned” only to never transform on their 13th birthday, then the hags try to eat them and they escape, but they still follow hag traditions like giving gifts to the resident hag who’s territory you’re in

So are you a fey or a demon?
Fey: I am a force of chaos.

My first DND encounter with a hag was when I was in my High School DND club(as of now I’m still in the club). My group was playing Curse of Strad when we came across an abandoned windmill ran by an old lady who was selling “magic pasties”. Eventually we found a barrel full of some evil goop, and she took this as a threat, which she called down two more and attempted to kill us.
We spent 2 and a half hours trying to kill these old barches. That was the entire session. We were all like level 2 at the time, so we were still weak as hell. We got to the point that the DM was just giving us extra damage to kill them, like saying that one Hag conveniently stumbled into the lit furnace, and we shut it on them.
Luckily for my self-esteem, I was the one who killed the last Hag fair and square.

they'd make a great enemy for a pair of ranger siblings

A hag huntress that is also a hag however good aligned, this was possible as the human baby eaten was partially divine, and the divinity within thwarted some of the corruption, they have now lost their access to divine power, but are a fully fledged hag, with good (or neutral) alignment
They would hunt other hags since their fully human younger sibling was also turned into one and lost its personality to their twisted nature.
The progress could be a solo Hag or even, a hag Hunter that creates a covenant that hunts other hags

If a baby goes missing for a week then suddenly returns do the parents think that's normal? I'd have some questions for that baby.

If you try to stop a hag from crossing their fingers, short of a command or suggestion spell and are simply trying to roleplay through the scene, does a hag have the ability to grow extra arms or fingers under their cloths and out of sight? And also would the finger crossing condition work if they used magic fingers like a mage hand?

When the hag's got 20 in INT: they make a promise, but cast alter self before and gave themselves an extra, tiny arm under their armpit and crosses the fingers on that hand. they never promised to make the promise fairly xD
