The most critical component is convincing two other players to also play a hag so that your party is actually a coven.

Hags can in fact be good. They lean towards evil but not on every plane.

A good comparison are the dragons of Eberron.

Hexblood was one of my favorite to play. I loved wiggling out teeth and handing them to em. I took pact of chain and my familiar was a creepy doll me and a teammate made out of vines and plants.

Pact of the chain if you want a pet, pact of the tome if you want more ritual spells... which is a very Witch Coven thing to do, especially since you can cast rituals without expending a spell slot, it just takes a while so you basically have to cast them out of combat or else be quite vulnerable... and thus rely on a party to help protect you while casting.

Your patron is your mother and you are expected to return to her to do coven stuff at least once a year.

Warlock could be really interesting if you make your patron your own hag mother. Maybe the hag just wants to convince you into joining the fold of her coven and loves you in the weird, twisted way a hag would, or maybe she's trying to replace her ancient body with your much younger one by having you sign yourself away, piece by piece.

Another option is sorcerer. You could flavor the Aberrant Mind (telepathy and general creepiness), Shadow Magic (some hags have familiars and strong ties to darkness/night), or Wild Magic (unpredictability can tie into the Fey easily) into some vaguely hag-like things, and Metamagic also adds to the idea that you cast your spells a little bit differently than the average caster (given that they use the Innate Spellcasting trait, this makes sense).

I played a Hag who wasn't as good of a spellcaster, so she relied on her super hag strength. She was a professional wrestler.

In theory there are good hags from older editions (don't quote me, they may be homebrew from d&d beyond). Namely the matchmaker hag who feeds on the emotion of love from those they paired together.

The "good hag of the east" woukd be baba yaga, aka The Hag of hags, aka the Iron Hag. "Good" is relative though, she still ate people, but in some stories it was like she was trying to give up eating people, and then the hero, the object of her addiction, bypasses her security, walks right in her front door, and invariably finds her well hidden spell book... which is a talking cook book and her worst enabler. At some point you almost donr blame her for inviting the hero to sit on her baking paddle, a point of ettiquette that cannot be refused, but the hero is a hero so he feigns stupidity and sits on the paddle wrong and in then shoves baba into the oven, which she finds hilariously funny, forgets all about eating the hero and helps him on his quest.

Baba yaga is most often a side character that teaches the hero, or gives them magic to overcome their main obstacle, and then arrives when the show is over to eat the monster instead.

Something to not forget is that hags become Int casters when in a coven and are pretty much wizards, I have a hag character who is school of scribes, her book houses the spirit of one of her dead sisters

I think you could also go Bard or Artificer.
Bard for kind of a siren sea hag.
Artificer Alchemist for the potion making kind of hag that lives in some shack and sells half baked potions to the locals.

Swamp druid or underdark druid works too with a small dip in twilight, or death cleric possibly. I'm currently playing one. I went hexblood, started in twilight cleric to get spells like bless, bane, and several others. Will probably eventually hop back and forth through druid and cleric. Gets you spells to curse opponents such as bane, hex, and bestow curse, and contagion. I'd also pick up fey touched for misty step and silvery barbs.

In a short game I ran once, one of my players was a hag! She was an Artificer with the Alchemist subclass, so she specialized in making magic items and potions which I thought was awesome
