Ingredients: Vegan Red Lentil Curry (4 - 6 servings)
½ tbsp oil (or broth/water)
1 small onion, diced
2 cloves garlic, minced
¼ tsp salt
⅛ tsp black pepper
1 tbsp curry powder
1 tsp cumin
1 cup (192 g) red split lentils, rinsed
2 cup (474 ml) vegetable broth or water
450ml diced tomatoes, canned (or fresh)
1 cup (237 ml) coconut milk (lite or full fat)
1 cup (240 g) chickpeas (cooked from scratch for extra thriftiness)
Pinch of cinnamon
½ cup spinach, packed

I just made this recipe and I think it's one of the best things I've ever had! I've never made curry and never cooked with coconut milk (I don't really like coconut flavour). But decided to give it a try. And god, this is really good! And the scent that coconut milk gives is so pleasant and a bit sweet.

Of all the beans/legumes, chickpeas are my least favourite - especially from a can. They are 100% better if you start from dry.
