Long time listener....Watcher whatever you want to call it....over and over I click on your videos and your accent and aura make me watch even though I cant eat the chit your have gout and cant eat beef but the torture is worth it for the asmr you give. Good job Joe! Thanks for all the entertainment you have given me.

I buy “beef trim” a from a local, high end, old fashioned, stand alone butcher shop. It’s good meat that has been trimmed off of everything in their meat case from rib eyes to tenderloin to sirloin flap. They don’t sell anything for less than 20.00 a pound and some of it is a lot more. They sell olive Wagyu too. Unfortunately, I haven’t got any of that. The bags that they sell all enormous and they only charge fifteen bucks for them. They were ten bucks most of last year. They contain fat and other gnarly stuff that I have to get rid off, but they’re a phenomenal deal. It takes me about an hour to go through one bag, but I get anywhere from 12 to 18 pounds of good meat from one bag. This butcher shop is about a tenth of the size of Midland Meat Company and they fill up around five of these bags each day. They can’t grind all of it and sell it for hamburgers, so they sell it to people like me. It’s not something that they advertise. I found out by accident. I recommend that try to find a local butcher shop that does this if it’s interesting to you to use with recipes like this one because you can save a lot of money. The bags of beef trim that I buy look identical to the huge bag of meat on top of the cart at 5:58 in your Midland Meat Company tour video. This is without a doubt their “beef trim” and it’s the equivalent of what I’m getting for fifteen George Washingtons. I also save the fat to make beef tallow with and I have so much from last year that I’ve been giving it away for free. There’s no better beef deal in town.
