Invented and named after a member of a Russian noble family Count Stroganoff by his personal chef, this delicious beef recipe has travelled far and wide across the globe since the 19th century. It’s time I share my version, which I have to admit is classic.

This classic beef stroganoff recipe uses traditional Russian ingredients like mushrooms and sour cream made this elegant dish stick around for centuries in its homeland, and interestingly enough the world over.

INGREDIENTS
1 tbsp oil
1 tbsp butter
1 onion
0.5 lbs mushrooms
1 lbs beef steak such as sirloin or rump
60ml/1/4 cup brandy
salt to taste
pepper to taste
125ml/1/2 cup beef stock
1 bay leaf
1 tsp whole grain mustard
250ml/1 cup full fat sour cream or creme fraiche
chopped parsley for garnish

I've made this recipe a few times and it is BONKERS delicious.

I just made this, with a few adjustments. I rarely follow a recipe exactly. As is my usual practice, I reviewed several recipes to get a feel for the essential aspects of the dish. Then I picked one (this one) as my reference. Here are my adjustments:

1. I used common white mushrooms, but I am sure cremini would do as well, despite MPW’s admonition.
2. I cooked the meat (top sirloin) and mushrooms separately in their separate pans, then set them aside. I feel this gives me the best control as I am focussed on only one ingredient.
3. Then I sautéed the onions alone in the main sauté pan.
4. Added the prebrowned meat, brandy, broth, mustard, etc. (I use Better Than Bouillon for broth.)
5. I added a little flour, as some other recipes do, to thicken the sauce, and simmered to cook the flour and heat up the meat.
6. Added the cooked mushrooms.
7. Stirred in the milk product. The Russian expert in my family advises that the sour cream we have in the USA is not the same as what is used in Russia, so anything we can do is a variation. I can get crème fraîche, but it is expensive, so I decided to experiment. I used Pavel’s Russian style yogurt. I don’t say it was the best choice — my sauce came out a little thin — but it certainly works.

Overall, I am very pleased with the result.

Reminds me of when my dad used to make it when I was younger with mash potatoes on a cold rainy day but he would add broccoli in it as well because I love broccoli and it was just for me

Yes the bayleaves were remembered in this recipe. So many recipes forget the bayleaves and believe me it will never be the same without bayleaves.

As a Swede I just realized this is the original for my childhood´s "korv stroganoff". It´s a very common dish here, but like a cheaper version with "falukorv", a certain sausage, in stead of beef. Commonly served with rice. I will definitly try this one. Back to the original!
