Vegetarian Southern Collard Greens Recipe

Collard greens prepared without meat yet still full of that smokey, southern flavor! Who says meatless collard greens lack soul?

Honey these collards are not messing around and this is how I prepare my greens the vegetarian way. The applewood smoke salt is doing it's thing all up in these greens! And don't even get me started on the flavor the fresh onions, garlic, vegetable broth and hot sauce brings!

The greens simmer slowly, soaking up all that yumminess. One bowl is never enough!!

Try them out and let me know what ya think!

Hi Mo! I've used your regular collard greens recipe for years and modified it to make it vegetarian. I use Morningstar breakfast patties as my meat and add smoke flavoring. Talk about good eats!! Thanks for thinking of us non-meat eaters with this recipe... 😄

This year I grew collards for the first time, just 8 plants I started from seed. Ill tell you what...they are the bomb! My favorite vegetable, and since I'm a vegetarian I've just been steaming them cuz no meat for me!! But this recipe is awesome! Gonna make it tonight! Plus I must say, you kept me interested in this video, great quality and love your humor...definitely beats the boring cooking channel! Thanks again!

Smoked salt! 11 years as a vegetarian and I've never heard of this

I followed this recipe almost exactly. The only difference was, instead of smoked salt, I used 'Liquid Smoke'. At the end of cooking, I DID a bit of plain white vinegar, which definitely brought the flavor to a whole 'nother level. (When I taste-tested BEFORE adding the vinegar at the end, it just wasn't as flavorful.)

One other IMPACTFUL thing I did... As the greens were cooking down, I noticed the sauce looked bland...very clear...thin... I decided to make a bit of ROUX in a separate small saucepan (just using butter and flour), then added the roux to the pot of greens. The roux made the sauce darker and richer looking...not so bland and watery...and it definitely added another flavor element to the finished product.

Prior to this recipe, I was used to eating traditional collard green that was cooked with bits of smoked turkey. But this vegetarian version, and with my added roux and liquid smoke, was JUST as flavorful (as so long as I also add the plain white vinegar at the end...)

These were DELICIOUS! I don't like collards so I used mustard and turnip + I added chopped turnip root to it. SO good. Thank you Divas Can Cook.

Thankyou for making this video! A friend from church gifted me yesterday with a big bag of the most perfect looking collard greens I have ever seen, just picked fresh from her garden, and I wanted to do them justice with some new vegetarian recipe. Apple Smoked Salt is completely new to me, I never even heard of it before, but your recipe looks delicious and I can hardly wait to taste it!

OMG!! You are a LIFESAVER! I’ve never heard of smoked salt before and that is the BEST THING EVER! My 13yo loved these and now I have to make more- he ate the whole pot yesterday! Thank you so much!!! You deserve TV shows, marketing... I’m not the kind of person to go all fan girl on famous chefs, until now. I hope you make it so big I can buy your cooking utensils in the store!

You are a cooking doll, young lady. When you said "smoky", I was thinking that when I do your recipe, I'm gonna add a few splashes of liquid smoke to mine towards the end. Thanks for posting this. Keep cooking up these beautiful meals.
