Vegetarian "Southern-style" Collard Greens

Ingredients

1 tablespoon olive oil
1 tablespoon butter
1/2 large onion, chopped
1 teaspoon red pepper flakes
1 clove garlic, finely chopped
1 pound collard greens, chopped
3 cups vegetable stock
2 tomatoes, seeded and chopped
Salt and freshly ground black pepper

Directions

In a large pot over medium heat, heat oil and butter. Saute the onions until slightly softened, about 2 minutes, then add the red pepper flakes and garlic, cook another minute. Add collard greens and cook another minute. Add the vegetable stock, cover and bring to a simmer. Cook until greens are tender, about 40 minutes. Add tomatoes and season with salt and freshly ground black pepper.

Tomatoes in greens. That’s different. I’d use red bell pepper instead, if color is the aim. They’d also add more flavor than tomatoes. I do agree that there are many possibilities for preparing greens without pork or meat. The challenge is getting them to taste good without the seasoning meat(s).

Hated greens of all types when i was a kid. Didn't know what i was missing. Spinach, Collards, Mustard, you name it. Big big fan now.

And while a little pork won't go amiss, you don't need it. You can just cook down the greens, maybe a little butter at the end, salt pepper and you're good.

And i'd never waste a ham hock on greens (the greens don't need it), i save mine for baked beans!

Anyone can tell me where do they cook greens with ham and where the cook greens with smoked turkey ? It is a cultural difference or maybe in some states it’s ham and others it’s smoked turkey ?
