2 Great Pumpkin Pies, No Bake Cream Cheese & Old Fashioned
DO YOU REMEMBER that good old southern cooking?
Southern Pumpkin Pie Recipe is in our Vol. 2 Cookbook :

RECIPE for SOUTHERN PUMPKIN PIE
Ingredients
1 1/2 CUPS FRESH COOKED PUMPKIN (CREAM WITH MIXER) OR CANNED PUMPKIN
1/2 STICK OF SALTED BUTTER OR MARGARINE
3/4 CUP EVAPORATED MILK
4 LARGE EGGS (BEAT WITH FORK) OR USE 3 JUMBO EGGS
1 TSP. PENZEY’S BAKING SPICE (OR 1/2 TSP. PUMPKIN PIE SPICE)
1 TSP. CINNAMON
1/2 CUP PACKED BROWN SUGAR
1/4 CUP OF GRANULATED SUGAR
DASH OF SALT
Combine the above ingredients in a large mixing bowl. Mix well with a wire whisk. Pour into the uncooked pie shell. Bake at 350 degrees until set, about 45 minutes. Serve with whipped cream or cool whip topping.
Option: reduce spice amounts if desired.
THE RECIPE FOR CREAM CHEESE PUMPKIN IS NOT IN OUR COOKBOOKS.
INGREDIENTS:
1/2 CUP GRANULATED SUGAR
1/4 CUP SALTED BUTTER, MELTED
8 OZ. CREAM CHEESE, ROOM TEMP.
Cream together and add:
1/2 CUP CANNED PUMPKIN PUREE
1 TSP. CINNAMON
Cream together with an electric mixer.

8 oz COOL WHIP (DIVIDED)
1 CUP COOL WHIP TOPPING
Fold 1 cup of the cool whip into the mix and mix well. Place the filling in a ready-made or homemade graham cracker crust and top with the remaining cool whip. Sprinkle with cinnamon sugar and refrigerate for 4 hours before cutting. Keep this pie refrigerated.

Those pies both looked so delicious! I’m glad that you’ve done the last couple of videos in that small apartment kitchen. Many of us can certainly relate, and it shows that you don’t need a big fancy kitchen to make delicious home-cooking!😊

I’m ready, once I have my annual pumpkin spice latte, it’s time dust off the cookbooks…. also a few years ago I wanted to make a no bake pumpkin. I was out of graham crackers, but I had some ginger snap cookies, so I used that with some pecan baking pieces to make my crust and it was such a hit that it’s now my go to. I’ll be making it again this year I think for my fourth year . But your traditional custard style looks way better than a store bought, I might make 2 pumpkins this year …. Last year I also made the crock pot thanksgiving meal, it was so amazing, and I didn’t have to throw away any leftovers. You know how it is when your kids are grown, sometimes they get to come home for thanksgiving and sometimes they don’t, but thanksgiving dinner has to be made no matter how big or small . I watch your channel bc I have learned to cook for my hubby and I with very little work in the kitchen . Thank you for sharing, can’t wait to see more holiday recipes

Both pies look equally good to me, they are interchangeable in my opinion, I would be happy either way . Keep up the good work 👍, it's that time of year again when food becomes our friend.

Hi Tammi I haven’t been on my phone for a while. Your pumpkin pie looks good but I personally like a spicy pumpkin pie. My spices are cinnamon, ground mace, ginger, cloves. I also use 1/2 & 1/2, I don’t like the taste of evaporated milk. Your pie crust also looks great

To make fresh pumpkin puree cut a pumpkin in quarters put in roasting pan in oven for one hour 350 skin lifts right off the pumpkin the seeds and strings come out easy with spoon mash or puree like can still bake

You can add a bit of the leftover pumpkin (not the pumkin pie mix or anything with xylitol) to your dogs food or just give it to them as a snack. Has some good vitamins and is good for their digestive system.
