Ingredients (Serves 2 | Prep time: 25m Cooking time: 30m | 791 calories & 38.5g fat p/serving):

- 2 Beef Fillet Steaks
- Pre-Roll Puff Pastry
- 200g Chestnut Mushrooms
- 1 Onion
- Knob of Butter
- 5 sprigs fresh Thyme
- 6 slices Parma Ham
- 1 Egg
- Olive Oil (to fry)
- Vegetables to serve

Really nice recipe - I prepared this for Christmas day for my mother and myself - perfect, as it is easy scalable according to the number of diners to expect. I scoured some 20 recipes for beef wellington and this absolutely nailed it....

This looks great! Can you tell me what I could use besides egg wash to have the puff pastry dough stick together? (We have an egg allergy in our family). I was thinking vegetable or olive oil - but would that be sticky enough? Thanks! I will definitely make this one.
