The mushroom combo alone with fresh (!!!) morsels, chanterelles with champignons in the Duxelles, much tastier than adding truffle oil.
The montage on the flambee sauce.
The parsnip puree instead of potato based. The little thyme flowers added before baking. The sheer sight of the shiny glazed baked bite... Aaahhhh...

Pure awesomeness!!!

PS: my late wife would have appreciated the kitchen cleaning, in between and after cooking... 😂😂😂
