HOW TO MAKE VEGGIE SUSHI ROLLS (NO RICE)

INGREDIENTS:
½ Red Bell Pepper (sliced thin)
1 Long (or regular) Orange Bell Pepper (sliced thin)
2 Carrots (peeled and finely grated)
3-5 stalks Green Onion (cut thin)
1/8 of a Purple Cabbage (sliced thin)
3 cups of Broccoli Sprouts (or any seed sprout of your choice)
2 Avocados
Juice from ½ of a Lime
Salt, Black Pepper and Garlic Powder (to taste)
4-6 sheets of Nori
INSTRUCTIONS FOR GUACAMOLE:
•Cut Avocados into small cubes, scoop out into a mixing bowl
•Add Lime Juice
•Sprinkle Salt, Black Pepper and Garlic Powder to taste
INSTRUCTIONS FOR VEGGIE SUSHI ROLLS
•Lay one sheet of Nori smooth side down
•Spread a thin layer of Guacamole onto the Nori leaving about an inch across the top of the sheet bare
•Spread Sprouts over the Guacamole
•Add a thin line of Bell Peppers, Carrot, Green Onion and Cabbage across the middle of the sheet
•Gently roll from the bottom of the sheet and just before you get to the top that is bare dab your fingers in some water and dampen the tab and then continue rolling to seal the Sushi.
•Cut in half or in smaller pieces and enjoy.
