Ingredients
3 cucumbers
Cream cheese of choice
1 Avocado
Smoked salmon

Step 1. Peel the skin off the cucumbers lay it down in a dry surface and pat it with a paper towel to dry it
Step 2. Spread cream cheese on the cucumber peels
Step 3. Put smoked salmon and avocados on top
Step 4. roll the cucumber up and cut

I've worked at several sushi places that offered cucumber rolls though typially the cucumber is all one piece. It's actually one of the first things a sushi apprentice learns after rice. I had the honor to learn how to do it at one of my jobs and let me just say, it's takes some serious skill
