How to make a strawberry rhubarb pie

Join us in a creation or Strawberry Rhubarb homemade pie.

Pie Crust Ingredients:

2 Cups - Flour
1 1/3 Cubs Shortening
1 1/2 tsp - Salt
2/3 Cups Water

Pie Filling Ingredients

4 Cups Fresh fruit - I use Strawberries and Rhubarb
1 Cup Sugar
4 TBSP - Cornstarch

Instrutions:

Pie Crust Recipe:
1. Mix Salt into water and set aside to dissolve
2. "Cut" Shortening into flour
3. Incorporate water into flour and shortening by "cutting in"
4. Once water is incorporated and shortening is "pea" sized form dough into ball and wrap in plastic wrap
5. Let dough rest in refrigerator for one hour
6. Once dough is rested roll out two sheets to fit a 9" round pie plate - one for the base of the pie - one for the top of the pie

Pie Filling recipe:
1. Boil Fruit in a medium sized pot on medium heat
2. After fruit has lost an adequate amount of juice
3. Mix together cornstarch and sugar
4. Add dry ingredient mixture to boiled fruit
5. Continuously stir until fruit thickens - if too thick add water to thin - if too thin add small amounts of cornstarch
6. Set aside to cool when fruit is desired texture

Preheat oven to 375 degrees
Cook pie for 50 minutes

Take out when pie is cooked and let cool before serving
