How to cook White Steamed Buns - Like Chinese white Buns

Hello Guys, I like to share to you my White Steamed Buns like Chinese Steamed Buns, it is very white, very fine and Soft Buns. Definitely very Yummy partner with Coffee.
In this Recipe you need:
White Dough:
50ml or ¼ cup Warm Water
7g or 1Tbsp Instant Yeast
1 Tbsp Sugar
(mix all, let it bloom for 15mins)
400g Banh Bao or Dumpling Flour (3 cups + 1/8 cup all measuring cup)
¼ tsp Salt
150g or 3⁄4 cup Sugar
50g or ¼ cup Lard (you can also sure shortening)
100ml or ½ cup Warmm Water
50ml or ¼ cup Warm Water (Additional)
(Mix all and Knead to smooth Dough)
Drop of Cooking Oil in the Bowl (Spread over the Bowl)
(Rise for 60mins in Warm Place before forming)
(Rise for 30mins in Warm Place after forming)
Cooking Process: Cook/Steam for 20mins

I dont have dumpling flour, can i use cake flour or all purpose flour instead?

WHat can I use instead of dumpling and bahn bao flour? And what kind of flour (not dumpling or bahn bao flour) will make it very white color?
