I totally agree, many restaurants especially in my country (England) seem to cap how good they can make mussels.

It got to the point where I was thinking I was doing something wrong (you know where you grow to like an incorrect way of cooking).

However, when you go to Belgium or France even your average restaurant/cafe/brasserie are making 9/10 10/10 versions of this dish. This is where you can take your home dishes with a little effort, thats what make mussels so great (plus the nutritional value v cost).

Same! I always do them at home! Just like you have shown, they are so easy to make and way less expensive. Plus when I make them at home I won't be disgusted by dirt, grit and beards like I did the last time I ordered them out at a 'popular destination restaurant' in the Outer Banks.

Ditch the salt! The rest is perfect. But really, ditch the salt. These things come from the sea, they are salted :)

I love mussels, but my OCD makes me want (no, HAVE TO) take all the meat out of the shells before eating.
