Mexican Corn Salad

The giant salad form of the Mexican Street Food "Esquites", a corn dish sold in cups on the streets of Mexico.

This corn dish is outrageously delicious. My friends are mad for it!

As I watched this I thought hey this would make a nice office potluck dish to take in. Then it immediately occurred to me right after that thought, there aren’t gonna be no more office potluck or picnics for quite a long time still to come. Nice dish though, I like it.

Roasted Corn Salad

5 cups corn cut from the cob
2 tbsp / 30g butter
2 garlic cloves, minced
1/2 tsp each salt and pepper
1/4 cup mayonnaise
1/4 cup sour cream (or yoghurt)
1/2 cup parmesan cheese, finely grated
1 tbsp Jalapeno, deseeded and finely chopped
1 cup coriander / cilantro leaves, roughly chopped
1 cup green onion, finely sliced
1/2 red onion, finely chopped
2 – 3 tbsp lime juice, fresh
GARNISHES
60g / 2 oz Cotija or Feta, crumbled
Jalapeno slices, coriander/cilantro leaves

Mayo and parmasen cheese are not Mexican. Should use Mexican Table cream and Cotija chesse.
