Horseshoe crabs aren't crabs, let alone crustacean. They're Chelicerates closer related to spiders and scorpions. The family that modern horseshoe crabs belong to, Limulidae, have definitive origins going back 250 million years, though come from a lineage that dates to 400 million years ago. For us, these guys don't have much meat - they're mainly known for their hard, helmeted exoskeletons, the jointed legs, and blue blood that's prized for their usage in vaccines (such as thr Covid 19 vaccine). They can be eaten as their meat isna delicacy in Southeast Asia, but it's usually cooked in order to avoid food poisoning.
