Would be a 10/10 if you cleaned out the gills and mantle and fried it in a crispy batter before putting it in a sandwich with lemon aioli and chives instead of just having it plain like that.

For those who don’t know, a soft shell crab is a crab that was caught recently after shedding, so it’s new shell has not formed yet, causing the “soft shell”

Soft shell crabs are the most underrated seafood. period.

I believe crab shells are soft right after they molt. I've never tried them but having had regular steamed crabs, I can tell you the ones that are just about to molt will have the most meat in them. The way you can tell (at least with blue crabs) is if there's a dark color in various areas of the crab.
