✅Ingredients

DOUGH:
• 3-1/2 cups all-purpose flour, plus more for dusting
• 3 large eggs
• 2 tablespoons sour cream
• 3/4 cup water

FILLING:
• 2 cups mashed potatoes
• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1 cup grated cheddar cheese

FOR SERVING:
• 1/2 cup butter
• 1/4 cup sour cream
• minced chives

✅Instructions

1️⃣ 00:00:19 - In a large mixing bowl, make the dough by combining flour, sour cream and water. Slowly beat in the eggs until dough is well combined. Turn the dough out onto a clean, lightly floured surface. Knead 3 to 5 minutes. Wrap in plastic wrap and rest 30 minutes.

2️⃣ 00:01:07 - In another large mixing bowl, stir together mashed potatoes, garlic powder, onion powder, salt, pepper, and cheese.

3️⃣ 00:01:44 - Bring a large pot of salted water to a boil. Meanwhile, pinch of tablespoon sized pieces of dough and roll into about three dozen balls. Roll each ball out on a lightly floured surface into a 3 1/2 to 5 inch circle. Cover with a damp towel or paper towel to prevent them from drying out.

4️⃣ 00:02:25 - Place a heaping tablespoon of potato filling into the center of each circle. Fold in half, pinching the sides shut with your fingers, or gently with a fork to seal.

5️⃣ 00:02:47 - Working in small batches, boil in salted water 2 to 3 minutes, until they float. Remove and transfer to a paper towel lined plate to drain.

6️⃣ 00:03:00 - Melt 1/2 cup butter in a large skillet and saute pierogi until lightly browned. Serve hot topped with sour cream and garnish with chives.

My mother made these when I was little, I’m 61 now, but remember how delicious they were. She would make potato and cheese, sauerkraut and forest mushroom, meat (pork garlic sausage), and meat minced roast beef and onion. She even made dessert ones like blueberry or cherry. I’m going to give this recipe a try and see how they turn out.

My parents made perogies for all of us kids when we were little (8 kids). My dad made the dough and used the top of a coffee can to cut each perogies, my mom made the filling. They were fantastic and deep fried

How to Make PIEROGI

DOUGH
3 and 1/2 cup all purpose flour
3/4 cup water
2 tbsp sour cream
3 eggs
And knead into a smooth dough and rest for 30 min

FILLING
2 cups Mashed potatoes
1tbsp Garlic powder
1tbsp Onion powder
Salt and pepper as per taste
1 cup Cheddar cheese
Mix the filling together.
Roll out dough balls into a circle, place the filling and fold them sealing them shut.
Boil these for 2-3 min or till they float to the top and dry them. Then saute them in butter until light brown on both sides.
Serve them garnished with sour cream and chives on top.

I will have to try this recipe. The way I have made potato and cheese porgies in the past is to use frozen ones. I saute sliced onions in butter and add the thawed porgies in the pan with the onions and cook them till they heated through. Then I sprinkle them with chopped bacon and sour cream. Getting but filling. It's one of my comfort food and I am not even polish!

I always love to add fresh spinach, onion, pablano peppers, and cherry tomato to the final fry once they are good and crisp. Make a full meal out of it 😉

Beautiful! I totally adore perogies and in fact just served some to my grandson and his GF last week, but they were just frozen ones from the supermarket and they were a bit of a disappointment. I wonder if it would be feasible to make a big batch of these and freeze them? Would it be better to freeze them raw, or boiled, or after they are sautéed -- do you know?
