⭐️ Ingredients
2 tablespoons extra virgin olive oil
1½ pounds leeks about 2 large
1 large white onion
1½ pounds potatoes Yukon Gold
4 cups vegetable broth
3 sprigs thyme
1 bay leaf
1 teaspoon salt
¼ teaspoon black pepper
⅛ teaspoon nutmeg
1 cup full-fat Greek yogurt or dairy-free yogurt
1 tablespoon chives finely chopped

It's an amazingly forgiving recipe, as it doesn't require precise measurements and will still turn out fine. I prefer chicken stock. If you have no potatoes, you can always use leftover mashed potatoes or even potato flakes.

I also cook like this but never tried a soup of potato as a base... yoghurt is a interedting addition to a sauce.. Im Greek and i have yoghurt as one of the most important and nutritional material of all...its so surprisingly beautiful to see that yoghurt is being used like this also in a place across the Atlantic... maybe yoghurt isnt that a huge secret after all... I would cook like this a soup made of yellow pumpkin or from vegetables like beetroots... or spinach..
