A manual gearbox is one of the attractive traits of these vehicles. EV conversions typically remove the need to change gears due to instant torque at all RPM. I always felt the software should mimic an ICE to some degree to require gear changes, perhaps at a broader range than ICE. It sounds like it is possible with your config setup.
