Cucumber Smoked Salmon

Ingredients -

1 - Cucumber
60g - Smoked Salmon
1/2 Small - Red Onion
2 Tbsp - Cream Cheese
2g (0.1oz) - Fresh Dill, Chopped
2 tsp - Capers, Washed
Salt & Pepper
MSG (Optional)

Method -

Slice cucumber into thin rounds. Use a mandolin for the best accuracy. Place all ingredients into a bowl or container and mix to combine. Serve and dig in.

Korean Cucumber Salad

Ingredients -

1 - Cucumber
2 tsp (10ml) - Light Soy Sauce
2 1/2 Tbsp (50ml) - Rice Wine Vinegar
2 tsp (20g) - Honey
2 tsp (10ml) - Sesame Oil
2 - Spring Onions (Scallions), Thinly Sliced
1 1/2 tsp - Gochugaru (Korean Chilli Flakes)
2 tsp - Sesame Seeds
2g (0.1oz) - Coriander (Cilantro), Chopped
Salt & Pepper

Method -

Slice the cucumber into thin rounds. Use a mandolin for the best accuracy. Place all ingredients in a bowl or container and mix to combine. Serve and dig in.

Cucumber Onion, Tomato, Dill Salad

Ingredients -

1 - Cucumber, Chopped
250g - Cherry Tomatoes, Halved
1/2 - Red Onion, Thinly Sliced
1/3 Cup - Mixed Herbs, Dill, Mint, Flat Leaf Parsley, Picked

Red Wine Vinaigrette -

2 Tbsp (40ml) - Red Wine Vinegar
1 1/2 tsp (6g) - Onion Powder
1 - Garlic Clove, Grated
1/4 Cup (60ml) - Extra Virgin Olive Oil
Salt and Pepper

Method -

Slice cucumber into thin rounds. Use a mandolin for the best accuracy. Place all ingredients into a bowl or container and mix to combine. Serve and dig in.

To make the vinaigrette, add all the ingredients to a bowl except the extra virgin olive oil and whisk to combine. While whisking, slowly pour in the oil and whisk until combined.

Recipe Notes -

Gochugaru is a coarsely ground Korean chilli powder that is similar to crushed red pepper flakes in texture. It is traditionally made from sun-dried peppers without the seeds. If you can't find it, don't stress. You can use a small pinch of ground chilli flakes instead. Please note, though, that chilli flakes are a lot spicier than gochugaru, so please don't blow your socks off—unless you like that, of course.

I make the korean one very often, i use gochujang along with the rest of the ingredients 🤤 and the toasted sesame oil is definitely a gamechanger 🤤🤤🤤

I’m really used to the salad with mayo “real mayo” sugar apple cider vinegar dill weed with thinly sliced onions cukes sliced soaked in saltwater to keep crispy. Drain and mix ingredients to taste.
