I logged into my Google account just so I could like and comment on this video. This might be the best cooking video I've ever seen on Youtube. PLEASE do more cooking videos in Susur Lee's kitchen. It makes me so insanely happy to watch him think and craft. Bravo.The breaking down the macaroni and then steaming it was brilliant, alongside the Béchamel. Ahhhh! So amazing. I think there's so much to learn from the movement of a great chef. He's so efficient and deliberate with his decisions to the point where it's almost unconscious. How he just has a feeling of when to start making the different parts so that they are done at the same time in the end... just incredible
