Saffy support van. Make sure to include a spare key, or three. :D

What I would suggest is to work out all the tools you need to take your entire bike apart and make a kit out of them. Spare fluids, filters, spark plugs, tire patches, maybe even your next set of tires as spares. Frquently broken parts like mirrors and levers. Depending on how far off the beaten path you want to go things like fork seals and chain and sproket sets might be a good idea. A small portable bike stand and leave enough room in the back to work out of the weather if needed.

I can't express enough how much safer and easier it is to load a bike if you have have a wide ramp. The narrow ones are easier to pack away, but the wider ramps are much safer. You can walk up the ramp next to the bike and that makes a world of difference.

A luxury item is to have a roll up awning on the side of the van you can use to get out of the sun or rain if needed.

Welcome to van life Saffron!. As someone who's spent the past 15 years living full-time in vans and or a converted horse box today, I know just a wee bit about this gig. I've also fitted out numerous other vans and horse boxes for other crusties and not so crusties 😅.
Having said that I've a few bits of well ment advice to help you get started.

Don't skimp on proper insulation or the condensation from the metal box will offer you up no end of agro.
Keep it simple and minimalist as more than half of all campervan conversions are vastly overweight & wouldn't pass a vosa test.
IE, avoid things like large fixed water tanks because water is the heaviest thing you'll lug about and unless you place it in the very center you'll probably be lopsided. Also keep as much of the weight you add biased towards the middle of the van, as in between the front and rear wheels. Yours is front wheel drive so if you add too much weight over or behind the back wheels you'll end up stuck on wet grass, never mind muddy campsites.
If you decide to take advantage of the large rooftop space and add solar panels?, it's a brilliant idea, check out a company called "Bimble solar". They specialise in solar for vans and narrow boats etc and are comprehensive and well priced. ( I have no affiliation beyond being a longtime and happy customer)
Also on electric, make sure you can plug into 16amp mains at campsites etc because your large host of electronics will thank you.
Invest in a quality set of levelling ramps for under the wheels because no field is flat and you already know that sleeping wonky isn't fun.

Beyond those basics, I'll leave it there and say, have fun!!!.

I'd have hired a small steam cleaner for the seats, remember to buy/make a wide ramp for loading your bike into the van its much easier. Looking forward to your van project build 👍👍.

Take the batteries to your local car battery emporium (not halfrauds) and they will do a proper battery capacity/ load test for you. Usually free.

Move the electrical system to one side and you can create either two shallow storage areas with the bike in the middle or have the bike over to the passenger side and have a wider storage along the drivers side of the van and add a hinged drop down single bed in case you need to crash out for the night somewhere
