Bacon and cheese potato croquettes | Easy croquette recipe
I remember as a kid, having those rubbish frozen croquettes that were really bland, but my 8 year old self loved them. Apart from being not that good, those croquettes were a far cry from what they should be, which is crisp and jam packed full of flavour. They are also great for using up any leftover mashed potato.
Now you can come up with all sorts of fillings for these, but my recipe uses smoked bacon, cheddar cheese and springs onions. It's all mixed up together, coated in breadcrumbs and then deep fried until crisp. the result is amazing. I also whipped up a quick spicy mayonnaise using a Korean chilli paste called gochujang. If you don't have gochujang, you could use your favourite chilli sauce instead. If you want more mayo to dip them in, you can scale it up easily enough.
These potato croquettes will freeze really well, by placing them in zip lock bags after adding the breadcrumbs. then simply fry from frozen (add on a couple of minutes frying time if cooking from frozen)
►700g of mashed potato
►200g of mature cheddar cheese
►4-6 rashers of smoked bacon
►3 spring onions
►2 tbsp of fresh parsley
►Fresh breadcrumbs
►3 eggs
►Plain flour
►Salt & pepper
►3-4 tbsp of mayonnaise
►1-2 tsp of gochujang paste
►1 tbsp of honey
