These delicious little Bacon and Cheese Potato #Croquettes are filled with chopped bacon and meltingly Happy Valley #Mozzarella #cheese.
If you're feeling creative, feel free to add other ingredients.
Fluffy inside and crispy outside.
You can also serve these with your favourite dipping sauce.
These are perfect as a side, buffet food, or for snacking.
Bacon and Cheese Croquettes
Servings: 10 pieces
Prep Time: 15 Minutes
Cook Time: 10 Minutes
Total Time: 25 minutes
Ingredients:
100 gm Happy Valley Mozzarella, cut into 1cm cubes
4 rashers middle bacon, finely chopped
250 gm mashed potato
1 egg yolk
2 finely chopped spring onions
80 gm plain flour
100 gm fresh breadcrumbs
1 egg
60 ml milk
Cooking oil
Mixed salad leaves, to serve
Instruction:
1. Cook bacon for 3 to 4 minutes until browned on medium heat, set aside.
2. Place flour and breadcrumbs on two separate plates
3. In a large bowl, combine mashed potato, egg yolk, spring onion, bacon and 30 gr flour.
4. Take 1-2 tbs of the mixture, put 1 cheese cube into the center of each ball, mould mixture around cheese to enclose.
5. Whisk 1 egg and milk together in a shallow bowl. Roll croquettes in the remaining flour, shaking off excess. Dip in egg mixture. Coat in breadcrumbs.
6. Pour some oil on the pan for shallow frying. Fry the croquettes on medium heat until golden brown. Serve with some mixed salad.
