Since he mentioned it in the video, if your sushi fish ever smells "fishy" thats a big red flag, a fishy smell is caused by the break down of enzymes, basically meaning the fish is old. Good quality sushi should basically smell like nothing lol.
Unless you get your meat product from a high quality, very trusted source, please always cook it people, would not recommend making your own sushi for most people it's just not worth the price or risk.

If it says previously frozen you automatically know it was treated with carbon monoxide. A practice that is illegal in America which means the fish was imported probably from a country with very low health standards. Also the carbon monoxide is for color retention, a one month old piece of fish now looks bright cherry red as if it was nice and fresh which is super deceiving and can be kinda dangerous for your health. Support local fisherman
