The safest way to defeat Enderman for me is to make a 1x2 "Bunker" 2/3 of their height, attack an Enderman and hurry inside the installlation and then hit them from inside 'till they die.

better method: go to a warped forest, dig 2 block high tunnels into several walls, aggro randomly spawning endermen with bow/spyglass, retreat to the nearest tunnel, and watch as they're completely unable to hurt you
