Apparently the children were born into a family of cloth makers and their skin was green because of the dye they used on the cloth. They refused to eat anything because they ate very little food and the boy died of malnutrition. However, it is true that Martin's land doesn't exist, but they are rumoured to have come from Belgium or somewhere in the Low Countries

I researched a lot on this topic and here are a few valid explanations

1. The kids were living in a copper mine. Copper imparts greenish tinge to the skin on exposure. Maybe these kids were exposed to copper dust.
Being fed on greens would have helped leach the copper from their system. Meat doesn't react well with deposited metals hence the boys immune system couldn't take it anymore
And the girl lost her green pallor as they she wasn't exposed to copper anymore

2. A condition that goes by the name Sulfhemoglobinemia,  a rare condition in which sulpher replaces Iron in hemoglobin and can give somewhat of a green appearance

But in the end there is the "Land with no Sun" argument which just makes it paradoxical
The whole story is a blend of science and fantasy in my eyes

I know this story, the reason for the green skin was that they worked for cloth makers and it was green dye, they only ate beans because they had been living in the forest so long that that was the only food they recognised and I'm pretty sure that they were from Belgium. Take ALL of this with a few grains of salt because my source isn't 100% reliable.
Another source says "They were probably suffering from chlorosis, a deficiency disease which gives the skin a greenish tint."
