This is the same sort of thing that I saw once, for making Burmese Tofu, which uses chickpeas. It’s great if you don’t want to eat soya.
I once made some tofu using ground pumpkin seeds and it came out very green like this, but it was such a fiddle, I never did it again (it did taste lovely fried though!) but this looks easy. I’ll give this a try.

this is such a great idea!! most tofu recipes are quite confusing or require ingredients too expensive to bother getting, but this makes it accessible and looks so good!

I’ve always made this with yellow split peas, garlic and chilli, we have slices shallow fried (hubby has fried bacon on his) yum.

If you want to take tofu to another level, mix some spices in cornflour, coat the tofu pieces, then fry or airfry 👍
Never thought to try peas for tofu, lentils, chickpeas among other legumes, but never peas, nice.

I actually use a very similar method to make Burmese tofu from any legumes :)

Like the recipe. We don't have whole dry peas here but what are called split peas. I'm thinking they would work similarly. Think your wild garlic is ramps here. More common in the SE mountains of US. I have a different wild garlic, long stems. Again would work. Hello from rainy Oregon, USA.

The patch i visit every year is in abundance, the leaves are huge this year, i noticed as well, it likes to grow under the trees, where the birds drop their bombs, so im picky when i pick.
