In Rachel's defense, she never claimed to be a chef and her meals WERE geared towards working moms trying to feed her kids something easy, healthy, and fun. Also, Mexican lasagna is such a 90s vibe 😅

there's a Mexican recipe called pastel azteca, which is made like that, but instead of taco ground meat it's made with shredded beef in saucy tomatoes layered in tortillas and cheese, it's goood 👍🏻

Aww my mom fed me and my two brothers with both of Rachel Ray's cookbooks for years!! Then when I moved out she gave them to me. 😭 They're great recipes for the average Joe who doesn't have the time or money to make an extravagant meal every night.

In terms of bang for your buck large volume meals this one is incredible, especially if you pad it out with some rice and do the majority in a slow cooker. Used to be a college go to but I didn't use her exact one

Her while point was cooking for a busy family. Not culinary excellence. This is fine for a weeknight meal when youve worked a full shift, commuted in traffic picked up kids at different locations and need to be in bed in 2 hrs

One of my cousins once said “Rachel has a Joker smile, I don’t trust her.” And I kind of agree.

I make this but I use lasagna noodles like normal then cream and Oaxaca like you would ricotta. The top layer is corn tortillas with more Oaxaca and whatever else like pepper Jack. You can also get the great value version in the freezer section and it’s like a Taco Bell lasagna.
