funny thing I met guy fieri once, I was 16 and I was wearing his signature flame jacket as a shirt (at the time I never knew who he was, and had no idea the jacket was his I liked the shirt cause well FUCKING FLAMES!)
he came to me and said "cool shirt man, you like me"

I replied "im sorry I dont know who you are, HE LAUGHED SO HARD
he asked why I was wearing it then, I said "I like the flames"

that is when I learned about him

I know chilli is a simple dish but god do I hate when food is given a lower score because it’s “simple” I’ve had meals from 2 star Michelin restaurants that were blown out of the water by a truck stop diner. Just because something is complex in its composition doesn’t mean it’s inherently better than something simple. It’s so pretentious, good should be based on its taste and smell. Those are really the only experiences that matters when it comes to eating. That’s not to say complexity is bad, molecular gastronomy is actually pretty cool but it should all come down to its smell and taste.
