These days, with the fava bean season in full swing and abundant in the market, I have decided to make a traditional and festive dish called "Baghali Polo ba Mahicheh" with it.
The combination of fava beans, rice, and fresh dill along with lamb shank, flavored with saffron and generous amounts of onions, creates an extraordinary and delicious blend that is a constant presence in Iranian gatherings and parties.

3 Cups Peeled Fava Beans
150 gr Fresh Dill
3 Tablespoons Steeped Saffron
2 Tablespoons Butter
2 Fresh Garlic

6 Large Onions
5 Tablespoons Steeped Saffron
4 Tablespoons Lemon Juice
3 Tablespoons Butter
4 Cinnamon Sticks
Oil as needed
Salt and turmeric as needed
