1 each egg yolk (use the eggwhite for eggwash)
1 Tbsp cold water

2 lbs chicken, breast or even better, use thighs
to taste salt & pepper
2 Tbsp olive oil
to taste fresh thyme
4 Tbsp butter, unsalted
1 each onion, large
2 cloves garlic
6 oz carrot
6 oz celery
6 oz mushroom
6 oz green beans or frozen peas
6 Tbsp all purpose flour
4 cups chicken broth
