you could use it as a glaze for chicken but the chicken might turn a funny color

Do you know if honey, coconut sugar, or maple syrup works just as well as granulated sugar? And maybe less of these would still work for canning? I'm concerned about the amount of sugar for it, and I know you reduced the amount from your recipe.
