New to the channel. Thank you. Fun ideas. And some lovely smiles.

What we do here in South Africa is we peel off the zest and pack sugar on it and allow it to extract the nice oils, overnight in the fridge. This then gets heated (not boiled) on the stove with the water. Allow to cool. The juice is then added and then the mixture is strained and voilá. 🤗

Then the rest of your cool stuff. 🍓

I lived in Arizona. Citrus trees galore. I used one cup lemon juice, one cup sugar for half a gallon lemonade. I would freeze the lemon juice in measured amount. It was so easy to prepare any time.
I only mashed fruit, saving the juice. Fresher fruit is sweeter.
No sugar worries.
