BACON!!! ❤😊❤😊 Chop thick bacon into 1-2 inch chunks or the same size as the diced potatoes. Fry the bacon with the potatoes. Add all to garlic-mayo mix. (I usually add smoked paprika and/or za’atar, but grated truffle would work fabulously well! (Not truffle oil, it has a bad aftertaste!) Serve with fried AND poached eggs for as needed. You might add a side of Mac & Cheese to make it healthier. 😂😂😂
