I’d say the 18th daedric prince would be the prince of the unknown, of ignorance, and limitations; therefore we wouldn’t understand or know him, as that’s his specialty.

Well it looks like eso confirms the 18th prince is named Ithelia, known as the Prince of Paths, the Mistress of the Untraveled Road, the Unseen, the Fate-Changer is the Daedric Prince of Paths

Three ideas of who it can be.
1. Mannimarco: At the end of Daggerfall/during War in the West, he used the Totem of Tiber Septim to make himself a god, and became the Necromancer's Moon, or created the Necromancer's Moon that shines on Necromantic altars in Oblivion that are used to create Black Soul Gems. The Mannimarco you fight in Oblivion is only the physical mortal form of Mannimarco, because the real Mannimarco has already ascended several years prior to the start of Oblivion (Because all of Daggerfall's endings are canon).
2. Lorkhan: It has been hinted at that Lorkhan/Shor is a Daedric Prince, and Mundus itself is an Oblivion plane.
3. The Hist: This would be more of a "Hive Mind" Daedric Prince though.

It's gotta be Mannimarco. Daggerfall's 'King of Worms' ending specifically describes him as 'joining the ranks of the gods of Oblivion'.

What if the player is able to become the 18th daedra at the end of ES6? It looks like the games are following the path of the towers holding the universe together, what if the player saves the last tower and by extension the universe?

the daedric princes are in a way mirror images of the divines. Talos rising into divinity around the second era created an imbalance in the mythic. (the mythic is best explained like the warp in warhammer 40k, where the collective belief and worship of sentient life forms will force reality to conform to the sheer collective force of will of the inhabitants of the mundus). The only known way to not be effected by this, and to exist outside of reality's limitations, is to reach CHIM, which is only possible by the inhabitants of mundus. This makes the wheel incredibly imbalanced, but you shouldn't think that there already aren't 18 daedric princes, because mannimarco, the king of worms, ascended to divinity "joining the gods of oblivion" and became the necromancer's moon, or shade of the revenant. HE became the 18th daedric prince in the 3rd era.

There are a few mistakes in your script.
1:07 The _aedra_ (specifically the Divines) are the spokes while the _daedra_ are the gaps.
2:11 Another mix-up of aedra and daedra: Before Talos...etc...there were eight _aedra_ and sixteen daedric princes. (You said "eight daedra")
2:30 More of a technicality, but Meridia wasn't aedric, she was a Magna-Ge. Also, Trinimac (who became Malacath) _was_ one of the most powerful of the aedra, being Akatosh's champion
