Since I’m a big soda/fizzy drink lover but have significantly reduced refined sugars in my diet I’ve kind of become obsessed with creating new flavors of probiotic-rich fermented drinks 🍉🍍🍋

As the fermentation eats up the simple white sugars and turns them into carbon dioxide, acids, trace minerals/vitamins and small amounts of alcohol we actually end up with a low-sugar drink that is way better (and cheaper) for you than any store-bought soda! 🥤

I've ended up making tepache with star anise, ginger, cinnamon, and cloves. My family drank it all before I got the 2nd batch done. Who knew they'd like it so much.

I have an interesting idea for a variation on what you are doing. I found that gently parboiling vegetables and then juicing them released all the resistance starch from the vegetable into the juice making it kind of milky. So I think kefir would probably ferment this resistant starch better than the actual sugars because the RS is more akin to lactose and maybe it would turn into something like a kefir milk drink.

Tepache is very popular in mexico. The street water vendors usually always have some. I didn't know it was good for you.

When I make milk kefir, I strain it to make cheese. I then use the leftover whey liquid to make whey soda. Give it a try!
