It's rather telling that the apologist doesn't bother with shoring up the idea of a God, but instead attacks the opposite or rejection of their position. Do they not realize that they could prove the atheists position wrong in an instant by just demonstrating what this "God" thing is and show concrete evidence of it's existence?

Sure, men and women aren't the same, even mentally.
However, if we subtract all the results of male and female expected behavior society impresses on us, then the remaining differences are very, very small, and most of them are directly connected with stuff like who you're attracted to, or being accustomed to a slightly different body. As for almost everything else (mentally), turns out differences between men and women are smaller than differences between women, or differences between men, respectively.
So, in almost every situation, mental differences between men and women are about as relevant as mental differences between blue-eyed and green-eyed people.
Which means that the sane thing to do is if you're interested in the mental capabilities of someone, completely ignore the fact it's a man or a woman (or anything else), look at what the individual capabilities actually are. That should always work, whereas looking at these classifications has a high failure rate - they are very bad predictors, given that we are not monocultural.
