How to Pan Sear PERFECT SEA SCALLOPS with Lemon Garlic Butter Sauce

INGREDIENTS:
1 pound scallops cleaned, drained and dried
Season both sides with kosher salt and black pepper
Oil for pan

4 tbsp. butter
juice of two lemons
2 sliced cloves garlic
1 tsp. dried parsley
salt and black pepper

In non stick skillet on medium high heat (8) add 1/4 cup oil and
coat bottom of pan.
Add seasoned scallops to pan starting clockwise.
Let them cook for about 2 minutes or until you see the bottom edges
start to turn golden brown. Keep an eye on them.
You want the scallop to form a nice deep golden crust and when it is ready
it will release from the pan freely..
Turn and cook another 1-2 minutes and then remove from the pan.

In the same pan on medium heat add 2 tbsp. butter and 2 sliced cloves of
garlic. Cook and stir for 1-2 minutes.
Add juice of 2 lemons, parsley, salt and black pepper.
Cook and bring up to a simmer while scraping tidbits
from bottom of pan.
Once sauce comes together add another tbsp. cold butter. Stir in butter
and remove from heat.
Spoon sauce over cooked scallops.

Enjoy.

Yum! Got me a 1.25 lb bag of locally caught scallops! Had frozen them tho... but just TOOK THEM OUT for dinner tomorrow! :)~ TFS.... the SAUCE LOOKS AMAZING! :)
