Are these wet or dry scallops? Also does that in fact matter?

What if your scallops are IQF meaning individually quickly frozen? I can’t seem to press enough water from them to get them dry enough to crisp that well. Can anyone help me?

Try carbon steel or stainless steel, they get way hotter than Teflon.
