Mashed Potatoes Recipe:
2 lbs (about 1kg) Yukon gold potatoes with 1 tbsp of salt in water and 1-2 tsp of extra salt when mixing
1 1/4 cups whole milk (295 ml)
4-6 tbsp unsalted butter 60-85 grams (depending on how buttery you like them)

Cheese sauce:
2 tbsp unsalted butter
2 tbsp all-purpose flour
1 1/3 cup whole milk (315 ml)
3 1/2 oz fontina cheese (100 g)
3 1/2 oz Gruyère cheese (100 G)

I dont know what people have against chunky mashed potatoes. Everyone makes them with a ricer online and it just makes it nauseatingly smooth

Thanks, Sonny! This recipe rocks my world. Want a tip- include red pepper flakes and garlic powder to the Cheese Sauce! I use 2 tbsp of each. Happy Cooking! BTW, adding chopped chives and diced roasted red bell pepper makes for a next level garnish! Adding crumbled bacon to the recipe and you risk getting arrested by the Potato Police!

One thing my dad taught me is that in order to stop a roux from seizing you can bring the milk up to ~110°f or so in the microwave before adding it to the flour/butter mixture! Has really made my life easier
