For the Fries:▪️1 lb. Russet Potato (1 large or 2 small)▪️2 Tbsp Olive Oil ▪️2 Tbsp Cornstarch▪️Salt & Pepper▪️Avocado Oil Spray▪️Ketchup, for serving▪️

1️⃣ Slice the potatoes in thin 1/4" strips (try to make them as uniform as possible and shorter fries will crisp up better so try to make them around 3" long); soak in cold water for at least 30 minutes (or up to 6 hours), this will remove some of the internal starch that prevents water from evaporating
2️⃣ Preheat the oven to 425°F and line 2 large baking sheets with parchment paper
3️⃣ Drain the fries and dry them off well with paper towel; pour into a bowl and toss with olive oil until all the fries are coated; add the cornstarch and some black pepper and toss again until coated evenly (wait to salt until the end which will maximize crispiness)
4️⃣ Pour fries onto the baking sheets; make sure that they are not touching and that the pans arer not overcrowded (over crowding will cause your fries to steam instead of crisping up)
5️⃣ Spray with avocado oil and bake on convection for 15-20 minutes until deep golden brown (if you don't have convection you may need to cook a bit longer)
6️⃣ Sprinkle the fries with salt and serve with ketchup - enjoy!

This is a myth and i have no clue how so many people believe it. I cook for my family everyday and fries are my fav and everytike ive tried this i turns out worse. Starch makes the fries crispy. You do NOT want to wash the starch out. On top of that your just adding it back in anyway. I see this so much and its such a dumb trend i dont understand how people even think it makes sense.
