Meu amigo! Estava quase desistindo desse projeto até que encontrei esse vídeo. Obrigado! Um resumo rápido do que fiz --> Eu tinha a aplicação rodando na minha máquina com Windows. Fiz um backup da configuração e guardei. Depois copiei o código que está no 17:40 do vídeo, mudei apenas a linha tz= para meu fuso horário, depois colei e rodei em um novo stack no portainer. Aguardei uns minutos e já estava tudo pronto, depois foi só restaurar o backup. Agora é só felicidade!! Bravo, amigo!

Thanks for this video. As someone who works in IT and had to mess around setting up MongoDB in the past, this container works perfectly as of today. For those who says it doesn't, all I can say is try again because I literally followed each step and it worked immediately. Debian Linux with docker and numerous Unifi U6+ AP's. Thanks.
