I bought a gaga classic pro. new VST basket, new shower screen, new grinder Breville smart pro, spent an day trying to dial in my espresso and always having channeling, my puck prep was, grind fresh beans picked up from a roaster friend, WDT the portafilter basket, level with a puck distributer, then a good tamper with a perfect fitting tamper and I got channeling, I changed grinds, I modded the gaggia and aded a dimmer, still channelling, I worked backwards and stopped tamping and just did the wet and puck distributer and BAMM no channelling, I went back and dialled in my grinds from scratch as I felt back at a good place and within 15-20 minutes perfect 80% coco dark chocolate notes, bitter sweet red berries. if your doing ALL the things you've seen on videos, try take out one step and see what happen, for me tamping was the thing, wont be for everyone, but being a barista for 7 years back in the days of the invention of the flat white here in nz ( yes I know the person that says they invented it in the cafe that did) I was always brought up on tamping being the essential last step before pulling a shot, my heavy distribution leveller does just the right job and ill l4ave the tamper in the drawer. maybe im proof you can teach an old dog new tricks haha
